I can't stop won't stop with the peach recipes...I just love celebrating what the Fredericksburg farmers have worked so hard to grow and thanks to the good Lord's blessing of rain this years crop has been the best in many many years...so there is much to celebrate. What a better way to do it than peach popsicles in that hot end of summer sun...yes the early fall sun is still hot in good ol' Tejas.
I must give you all a disclaimer: these popsicles are healthy, they are very refreshing, and they are not super sweet so if you like a super sweet popsicle pour some extra honey in there and make it just the way you like it. This is the way I made mine:
Put 2 peaches, 2 small cucumbers, 1 tbsp of basil, 1 tbsp of mint, the juice of 2 limes, 2 small bunches of basil and mint (about 1 tbsp of each) and 2 tbsp of honey in a blender. Now it's kind of important here that you have a Vitamix...it will be able to blend this stuff so well that you won't need to strain it and you get all of the great vitamins, fiber, and even better the color that the skin of the peach and cucumber have to offer. If you don't have a Vitamix...don't fret! Just a good ol' fashioned blender will do the trick...you will just need to strain it so that you get a good smooth pop. When you re done blending...give it a taste...too tangy...more fruit...not sweet enough...more honey. Then pop them in the freezer and have a little late afternoon treat. Happy end of summer everyone!
